Pancetta tesa is pork belly cured with red wine, juniper berry, fennel and black pepper. The belly is cured flat for a minimum of four months. Traditionally, pancetta tesa is used for pasta and cooking recipes (the muslce is kept flat for ease of cutting) but this tender belly muscle is fantastic shaved thin on a charcuterie board.
